We’ve all been there. What seems like days of indulging in glorious sweets and breads with not a vegetable in sight, and you feel like you’ve hit a wall. Your body is begging for something nutritious and in need of a reset. That’s where this Thai-inspired shrimp and cabbage soup comes in.
Let me be clear: this is not a detox, a cleanse, or any other word that makes eating good food sound like a punishment. It’s just a big, brothy, flavor-packed bowl that feels like taking a deep breath. Red curry and ginger bring the heat, lime adds a little zing, and heavy cream pulls everything together into a silky, cozy broth. Cabbage softens into the soup, carrots add a touch of sweetness, and tender shrimp bring the protein to make it a satisfying, well-rounded meal. Everything you need!
The best part is it all comes together in one pot, and you guessed it, less than 30 minutes. Because if we’re making an effort to eat a little better, the last thing we need is a sink full of dishes.
Whether you’re craving something lighter between holiday gatherings or just need to give your takeout budget a much-needed break, this creamy Thai red curry shrimp and cabbage soup has you covered. It’s warm, a little spicy, packed with vegetables, and exactly the kind of reset that still tastes like a treat.
Ingredients
- 1 lb shrimp, peeled and deveined
- About ½ head of cabbage, sliced
- 1 cup carrots, sliced
- ⅓ cup Thai red curry paste
- 1 tbsp ginger paste
- 2 tbsp minced garlic
- 4 cups vegetable broth
- 1 cup heavy cream
- 4 tbsp fish sauce
- Fresh lime juice, to taste
- ½ cup green onions, chopped, with whites and greens separated
- ½ cup cilantro, chopped
- Salt and hot Thai seasoning, to taste
- ¼ cup olive oil
How to Make It
1. Season the shrimp
Toss the peeled and deveined shrimp with salt and hot Thai seasoning. Set aside while you build the soup base. They’ll go into the pot near the end, so there’s no need to cook them separately. One less dish to wash? We’re already off to a good start.
2. Build the soup base
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the white parts of the green onions, about half of the chopped cilantro, the garlic, and the red curry paste.
Sauté for 1–2 minutes, stirring frequently, until everything is fragrant. This little step wakes up the aromatics and helps the curry paste release all that lovely flavor. Your kitchen should already be smelling pretty fantastic.
3. Add the broth and seasonings
Stir in the fish sauce, sliced carrots, lime juice, ginger paste, vegetable broth, and heavy cream. Mix well, scraping up any flavorful bits from the bottom of the pot, and bring the soup to a gentle boil.
4. Add the cabbage and simmer
Stir in the sliced cabbage, then reduce the heat and let everything simmer for about 5–10 minutes, or until the cabbage has softened to your liking and the carrots are tender.
Give the broth a taste and adjust the seasoning as needed. Want more heat? Add a little extra hot Thai seasoning. Need more brightness? Squeeze in some lime. This is your soup, after all.
5. Add the shrimp
Reduce to low heat and add the seasoned shrimp. Cook for approximately 3–5 minutes, depending on their size, until they turn pink (which happens pretty quickly).
6. Finish and serve
Stir in the remaining cilantro and the green parts of the green onions. Ladle the soup into bowls and finish with an extra squeeze of fresh lime juice and enjoy!
What to Serve with Shrimp and Cabbage Soup
This soup is lovely on its own, especially when you’re craving something warm and vegetable-forward. But if you’re in the mood for something a little heartier, you can add:
- Steamed jasmine rice: Perfect for soaking up every last drop of that creamy curry broth.
- Rice noodles: Great if you really wanna take this dish to slurp city
- Spring rolls: Our favorite appetizer from the frozen food section
This shrimp and cabbage soup checks all the boxes: warm, bright, a little spicy, full of vegetables, and incredibly low on cleanup. It’s perfect for that in-between stretch of holiday feasts, or whenever you need a little reset but still want something that feels special.
Happy souping!
