Okay, remember the focaccia situation? The one where I got a little too ambitious with oven temps and nearly took out my own molars in pursuit of greatness? If not, check out my last post for a refresher. After that, I wanted to revisit an oldie but goodie recipe that has never, and I mean NEVER let me down.
The Cinnamon Loaf.
I’ve made this more times than I can count, in more versions than I can count, and it truly hits every time. Orange extract with toasted almonds on top. Walnuts and banana. Blueberry and lemon. And chocolate chips, of course. This fail proof recipe is exactly why I was crowned long ago (by a committee of myself) as the Loaf Queen.
Why This Recipe Works
The batter is pretty sturdy. I’ve swapped in different extracts, folded in fruit, thrown in nuts and chocolate chips without throwing off the structure. It’s basically a choose-your-own-adventure loaf that always ends the same way: soft dense crumb, and a house that smells incredible.
What You’ll Need
- 2 cups all-purpose flour
- 1 cup white sugar
- ¼ cup brown sugar
- 2 tsp baking powder
- ½ tsp baking soda
- 4 tsp ground cinnamon
- 1 tsp salt
- 1 cup buttermilk
- ¼ cup olive oil
- 2 eggs
- 2 tsp vanilla extract
- 2 tbsp butter (for the topping)
- Your mix-ins of choice — this time I’m using chocolate chips
Let’s Make It
1. Mix the batter. In a large bowl, combine the flour, white sugar, baking powder, baking soda, half the cinnamon, and salt. Add the buttermilk, olive oil, eggs, and vanilla extract, and stir until everything comes together into a smooth batter. This can be your moment to fold in whatever you’re feeling — chocolate chips, walnuts, banana, blueberries, your call.
2. Get it in the pan. Pour the batter into a greased loaf pan and preheat your oven to 350°F.
3. Make the crumble topping. In a small bowl, mix together the butter, brown sugar, and remaining cinnamon until it looks like wet sand. Sprinkle it generously over the top of the batter. This is also where you can go rogue with toppings — almonds, an extra handful of whatever mix-in you used, a little more cinnamon sugar, whatever your heart wants. Don’t overthink it, or be afraid to experiment.
4. Bake. Bake for 50 minutes, until a toothpick comes out clean and the top has that perfect golden, slightly crackled cinnamon-sugar crust.
A Few Ways I’ve Made This Before
- Orange extract in the batter, sliced toasted almonds on top
- Mashed banana and chopped walnuts folded in
- Blueberries and a little lemon zest for something brighter
That’s really the whole point of this loaf — it’s less a single recipe and more a formula. Once you’ve made it the classic way, you’ll start seeing every ingredient in your kitchen as a potential mix-in. That’s how you know you’ve made it too.
