Roasted Corn Salad with Feta

As a self-proclaimed Corn Purist, historically I will only allow corn to be on my plate alone and touching no other food but a good slab of butter.

But lately… I’ve been branching out and trying new things. Being an actual adult and mixing it up: behold my super quick and easy Roasted Corn Salad!

It’s smoky, crunchy, salty, and the PERFECT dish for the summer. This comes together in about 15 minutes, here’s how to make it:


Ingredients

  • Corn (I used frozen—this is a lazy girl recipe, of course)
  • 1 Red bell pepper, diced
  • 1/2 Red onion, diced
  • Fresh cilantro (about ½ cup, but go with your heart)
  • Feta cheese (about 1 cup, crumbled)
  • 1 Lime
  • Salt + pepper, to taste

How to Make It

  1. Heat up a cast iron skillet over high heat and throw in your corn with butter and salt. Let it sit and char. No need to babysit it too much as you want it golden with crispy edges.
  2. Add in your diced red bell pepper and red onion and let everything get a little color and soften up. Once that’s looking good, transfer it to a bowl.
  3. Chop your cilantro and toss it in, along with the feta.
  4. Finish it with salt, pepper, and a generous squeeze of lime juice to wake everything up.
  5. Give it a mix, taste it and adjust if needed, and you’re DONE.

This has been amazing with steak, grilled chicken, really anything coming off the grill. Get creative and happy cooking!
