Cheesy Beefy Rotel Dip

Some dishes have been around so long and been a staple for so many family occasions, they aren’t even written down anywhere. The recipe lives in our minds and hearts. This rotel dip is one of those.

It’s so rich, super cheesy, a little spicy, and beyond easy to make. Keep this in your back pocket for game days, baby showers, family get togethers, girl dinner…you get the idea, it’s a perfect fit for anytime!


Ingredients

  • 1 lb ground beef (we’ve also used shaved beef if you want something crispier)
  • 1 can Rotel tomatoes with chiles
  • 8 oz Velveeta cheese, cubed
  • ¼ cup shredded cheese (whatever you have)
  • ¼ white onion, diced
  • Seasonings: garlic powder, salt, black pepper, chili powder, cayenne pepper, all to taste
  • Optional: ¼ cup heavy cream (if needed)

Directions

  1. Brown the ground beef in a Dutch oven or deep pan over medium heat.
  2. Add the diced white onion and sauté until softened and fragrant.
  3. Season generously with garlic powder, salt, pepper, chili powder, and cayenne.
  4. Stir in the Rotel and cubed Velveeta. Let everything melt together, stirring until smooth and combined.
  5. Add the shredded cheese for an extra layer of cheesiness.
  6. If the dip gets too thick, stir in up to ¼ cup heavy cream until it reaches your preferred consistency.
