30 Minute Lasagna Soup for the Soul

It has been so cold in Houston (50 degrees ok), and that means soup season continues to live on! I have a one pot lasagna soup that was so creamy, cheesy, and flavorful I simply melted into the bowl.

If you need a quick, comforting weeknight dinner that tastes like it simmered all day, this is your girl.


Ingredients:

  • Lasagna pasta, broken into pieces
  • 1 lb ground beef
  • ½ white onion, chopped
  • 3 tbsp minced garlic
  • ½ jar marinara sauce
  • 1 container of beef broth
  • 2 tbsp tomato paste
  • ½ cup shredded mozzarella
  • 1/3 cup grated parmesan
  • Handful of spinach
  • ½ cup Heavy cream
  • Red pepper flakes
  • Cayenne pepper
  • Garlic salt
  • Italian seasoning
  • Spoonful of ricotta (finishing touch to your bowl)

Instructions:

  1. In a Dutch oven, sauté the chopped onion and garlic until fragrant.
  2. Add the ground beef and brown until no longer pink.
  3. Add your seasonings and tomato paste; cook for 1–2 minutes to toast everything.
  4. Pour in the beef broth and marinara, then bring to a boil.
  5. Add the broken lasagna pieces and simmer 10–12 minutes until tender.
  6. Stir in mozzarella, parmesan, heavy cream, and taste to adjust seasoning.
  7. Add a handful of spinach and let it wilt.
  8. Plop into bowls and finish with a spoonful of ricotta.

This soup is exactly what chilly December evenings are made for. One pot, thirty minutes, zero leftovers. Enjoy!
