Have I mentioned they call me the Loaf Queen? Naturally, I had to bring you an easy Thanksgiving dessert loaf that’s got all the autumnal goodness you want.
We’re talking deep pumpkin flavor, a tart cranberry punch, and a bright orange glaze that makes it look (and taste) way fancier than the effort it actually takes.
This recipe is lazy-girl approved! Minimal dishes, no stand mixer needed (I don’t even own one lol), and ready to pop in the oven in under 15 minutes. It’s perfect for Friendsgiving, Thanksgiving, or any random day when you need something that feels festive and cozy.
Ingredients
Wet Ingredients:
- ½ can pumpkin purée (about 8 oz)
- 2 eggs
- ½ cup olive oil
- ⅓ cup orange juice
- 1½ cups granulated sugar
- ⅓ cup brown sugar
Dry Ingredients:
- 1¾ cups all-purpose flour
- 1 tsp baking soda
- Pinch of salt
- 2 tsp cinnamon
- ½ tsp allspice
- ½ tsp ground ginger
Mix-ins:
- 1½ cups fresh cranberries
For the Glaze:
- 2 cups powdered sugar
- ½ tsp orange extract
- 1–2 Tbsp milk or heavy cream (depending on how thick you like it)
Directions
- Preheat your oven to 350°F and grease a loaf pan.
- In a large bowl, whisk together the pumpkin purée, eggs, olive oil, orange juice, and sugars until smooth.
- In a separate bowl, combine flour, baking soda, salt, and spices.
- Add the dry ingredients to the wet mixture and stir until just combined — don’t overmix!
- Fold in the cranberries.
- Pour the batter into your prepared loaf pan and bake for about 55 minutes, or until a toothpick comes out clean.
- While it cools, make your glaze: whisk powdered sugar, orange extract, and milk or cream until smooth and pourable.
- Once the loaf is cool, drizzle glaze on top and enjoy!
