Hello November! Time to put away the Halloween decorations and roll out the gourd-geous Thanksgiving vibes. I’m bummed to say goodbye to spooky season but now comes true fall weather, for the year to slow down, and we get to spend extra time with loved ones. This recipe is a comfort meal for sure, and one I make every Friendsgiving that’s always a hit – Bacon Ranch Mashed Potatoes. Friendsgiving is just as big a deal for me as Thanksgiving itself: my best friend is the ultimate host, everyone brings amazing dishes, and we spend all night laughing and catching up.
If you are still brainstorming Thanksgiving side dishes, look no further! These Bacon Ranch Mashed Potatoes are also great in a pinch, I’ve made them for weeknight dinners and paired with a chicken, fish, or steak – SO good. There are two ways to whip them up: a simple version and a super simple version. Since I always seem to be short on time, I usually go with the super simple one, starting with a trusty tub of Bob Evans Mashed Potatoes and bacon bits—dress it up just a little, and you’re done!
Side note: Anyone else struggle to find themed movies or books for turkey season? As I write this, I’m rewatching Stuck in Love, which is amazing but just about the only one that comes to mind!

Simple Version
You’ll need:
- 4–5 Yukon Gold potatoes
- ⅓ cup butter
- Hidden Valley Ranch seasoning packet
- Thick-cut bacon
- Garlic powder, salt, pepper
- Green onions (optional for garnish)
Steps:
- Prep the Potatoes: Peel and cube the Yukon Golds, then boil until fork-tender.
- Bake the Bacon: Preheat the oven to 400°F, lay out 4 slices of bacon on a baking sheet, and bake for 15 minutes, or until crispy.
- Mash & Season: Mash the potatoes, then mix in the butter, ranch seasoning, garlic powder, salt, and pepper.
- Add Bacon: Chop up the crispy bacon and stir it in. Top with green onions for a pop of color if you’re feeling fancy!
Super Simple Version
You’ll need:
- 1 tub of prepared mashed potatoes (I go with Bob Evans)
- ⅓ cup butter
- ¼ cup milk
- Hidden Valley Ranch seasoning packet
- 1 packet of bacon bits
- Garlic powder, salt, pepper, and parsley
Steps:
- Toast the Bacon Bits: In a small pan over medium-low, toast the bacon bits until crispy (about 5 minutes).
- Heat the Potatoes: Warm the mashed potatoes in a pot over medium heat. Add the butter and milk, stirring until smooth.
- Season & Mix: Stir in the ranch seasoning, garlic powder, salt, pepper, and parsley to taste. Add the bacon bits and mix everything together.
- Voilà! Pair with your choice of protein, or just grab a spoon and dig in—no judgment here!
