The latter part of 2023 has been a little rough on me so I’d taken a break from baking, but today I felt inspired and in a muffin mood – behold the bright, citrusy goodness that are these orange almond muffins! Something about the holiday season puts me in the mood for citrus-nutty breads and this one is definitely going in my notepad of fame.

I threw these muffins together in record timing AND while putting up the Christmas decorations at the same time – talk about efficient! My only regret is not putting actual chopped nuts in the batter instead of just relying on almond extract, but no worries I’ll definitely be baking these babies again soon.
