But today was cooler than usual and I just couldn’t wait any longer- behold one of our favorite 30 minute dinners!

When planning dinners for the week we love to use jow.com for recipes (highly recommend), and this was one of the gems that was a hit and we made several more times. We tweak the recipe a little by pan searing chicken thighs separately before adding to the broth and because we love the heat I added red pepper flakes, double the amount of cayenne, and lemon zest. You don’t have to wait for winter to try this!
